We finally got in our Cowgirl Creamery Cheeses!
Mt. Tam: North of the San Fran Bay, Mt. Tamalpais rises like a
monument to Northern CA natural beauty. In deference, Cowgirl Creamery
named its signature cheese Mt Tam. It's a smooth, creamy, elegant,
triple-cream - made with tasty organic milk. Mt Tam is firm, yet
buttery with a mellow, earthy flavor reminiscent of white mushrooms.
Red Hawk: Red Hawk, a triple-cream, washed-rind, fully-flavored cheese
made from organic cow milk. Aged four weeks and washed with a brine
solution that tints the rind a sunset red-orange. Its an award winning
stinky beauty.
Pierce Pt.: PIERCE PT is washed in a muscato wine and rolled in dried
herbs from the Tomales Bay coastal region. The result is a delicious
cheese, semi-firm yet creamy, complex yet never overpowering.
Also another fun addition to our case is a cheese called Barely Buzzed
which comes to us from Beehive Cheese Co, UT. This is a full bodied
cheese with a nutty flavor and smooth texture. The cheese is hand
rubbed with a Turkish grind of Colorado Legacy Coffee Company's (The
Cheesemakers brother) "Beehive Blend". The blend consists of a mix of
South American, Central American, and Indonesian beans roasted to
different styles. French Superior Lavendar buds are ground with the
coffee and the mixture is diluted with oil to suspend the dry
ingredients in the rub. The rub imparts notes of butterscotch and
caramel which are prevalent near the rind, but find their way to the
center of the cheese. Awards - 1st Place, Flavored Cheddar American
Cheese Society Annual Competition 2007, 2008 and 2009.
